Lobster Fra Diavolo

Serves 4


1/4 cup extra-virgin olive oil

1 small yellow onion, diced

3 garlic cloves, crushed

1 28-ounce can Italian-style tomatoes, crushed or coarsely chopped, with juices

3/4 teaspoon dried oregano
Salt, preferably kosher
Freshly ground pepper

1/2 teaspoon red pepper or flakes

1 1 1/2-pound Maine lobster, cut in half

In a large-size saucepan, heat olive oil over low heat. Add onion and garlic and cook, stirring until softened, about 4 minutes.

Add tomatoes, oregano, salt and pepper to taste, and red pepper flakes. Bring to a boil and cook, stirring occasionally, for 5 minutes.

Add lobster, cut side down. Increase heat to medium, and cook until lobster is done, 5-7 minutes. Adjust seasonings to taste and serve at once.

Serve with clams and crabmeat on a bed of squid ink spaghetti or linguine.
